I’m a huge fan of not spending a million hours on dinner, which is why you find so many one pan meals and 30 minute meals here. When I did my first round and was learning how to cook for myself, I felt like I was chained to the stove! Then I realized that tossing everything in one skillet made life a lot easier.
This Whole30 lemon chicken skillet with broccoli is no exception. Easy peasy ACTUAL lemon squeezy. Everything cooks in the same skillet, there’s not 15 ingredients to prep, and in a few minutes you’ve got a delicious dinner! What makes this even easier for me to make is using powdered organic chicken bone broth collagen from Vital Proteins. One of the hardest ingredients for me to find in stores is chicken or beef broth. I used to always have to stock up and take up a ton of pantry space just to keep cartons of broth around that didn’t have a million unnecessary additives. The broth in this Whole30 lemon chicken skillet with broccoli just adds a bit of lemony creaminess to the skillet. I love the simplicity of this recipe. Just chicken, broccoli, lemon and some spices and that’s it. It’s a go-to just based on the simple fact that there’s no real prep. Especially if you buy a bag of broccoli florets that are pre-chopped! However, if you wanna switch it up, you could totally swap out the broccoli for a different veggie, or even add a few more you already have on hand. Zucchini, summer squash, snap peas and green beans would all work well with this!

Ingredients
- 3–4 chicken breasts (I used three particularly large ones)
- 3 cups broccoli florets
- 1 cup Chicken Broth
- 1/4 cup fresh lemon juice (about 1/2 small lemon)
- 1 tablespoon olive oil
- 1/2 tablespoon minced garlic
- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Parsley and lemon slices to garnish
Instructions
- Heat oil in a large skillet over medium heat. Season the chicken breasts with chili powder, onion powder, salt and pepper on both sides and add to the skillet
- Squeeze 1/2 lemon over chicken or dump in the juice, cooking for 5 minutes on each side
- Add in broccoli, garlic, and chicken broth into the skillet. Let cook for an additional 10 minutes, stirring broccoli occasionally and flip chicken breasts one more time until chicken is cooked completely and broccoli is fork tender
- Top with chopped parsley and another squeeze of lemon or lemon slices

Sounds delicious. FYI Herbox makes sodium and 1 gram sugar chicken and beef broth they come in packets that each make 1 cup. I will be trying this recipe

Anyone made this with frozen broccoli? Think it would work?

I think that would be okay. There might be a little extra liquid released by the frozen broccoli so you may need to drain a bit out of the skillet

Have you ever frozen this for lunch the next day? If so how does it hold up?

I haven’t! I’d think it would be okay – if anything, you might just want to not fully cook the broccoli so that way when it defrosts and gets reheated instead of getting mushy it just cooks all the way through 🙂
