Unlike some other meats which can take quite a bit of time and babysitting, smoking chicken wings is very straightforward, and a great protein to smoke for both beginners and pros alike! Almost all smokers operate about the same, so no matter if you’re using a Traeger, Camp Chef, Z Grill, or another type, this recipe will work for you!

Ingredients for Smoked Buffalo Chicken Wings
What’s great about smoking chicken wings, is that so much of the flavor comes from the smoking process itself, so you don’t need many other ingredients to make a delicious end result! For this Whole30 buffalo wing recipe, you’ll just need a few spices such as salt, pepper, paprika, garlic and onion powders. You’ll also need 4 pounds of chicken wings, and a bottle of Primal Kitchen Buffalo Sauce.
Primal Kitchen’s Buffalo Sauce is absolutely my favorite and go-to buffalo. We go through a bottle almost every other week! Unlike other buffalos that are thin and vinegary, this one is a creamy buffalo thanks to being made with cashew butter. It’s just so beyond good. Not only is it delicious, but it’s made without any of the junky ingredients, and it’s Whole30 Approved, Paleo, and Keto (low carb)!

How to Make Whole30 Smoked Buffalo Wings
You’ll start by first heating your smoker to 250 degrees F. Then, to prep these wings, you’ll first start by patting them dry with a paper towel and getting any excess liquid off of them. Then, add them to a large mixing bowl. Combine your spices, add those into your mixing bowl as well and then toss the wings to coat them.
Bring them out to your smoker and arrange them on the grates spaced out in an even layer. Close the lid and let them smoke for 1 hour. Then, return to your smoker and use tongs to flip them. Smoke them for an additional hour. The wings will have a crisp outer skin and be juicy on the inside once done. The internal temperature should be 165 degrees F.
Next, remove the wings from the smoker and into a mixing bowl. Dump your buffalo sauce into the bowl, and toss the wings with the sauce to evenly coat. Then you’ll want to dig in while they’re still hot off the smoker!
Smoker Tips and Options
If you have more time, you can opt to smoke these at 200 degrees F. for 3 hours, and still flipping halfway through at an hour and a half. This is a lower and slower smoking option that allows even more smoke flavor to get into your chicken wings. As for the smoke flavor, when you’re choosing pellets for your smoker, when it comes to poultry I recommend picking hickory, apple or signature pellets.

Ingredients
- 4 lbs chicken wings, patted dry
- 3 tsp garlic powder
- 2 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp pepper
- 1 cup Primal Kitchen Buffalo Sauce
Instructions
- Turn on your smoker and set to 250 degrees F.
- Pat wings dry really well and add to a mixing bowl
- Combine the spices in a small dish and then pour into the bowl with the wings. Toss to coat the wings in the spices
- Place the wings onto the smoker grates, evenly spaced out. Smoke for 1 hour, flip the wings, and smoke for 1 more hour
- Remove wings from the smoker and then toss with 1 cup Primal Kitchen Buffalo sauce
