Ingredients
- 2 lbs ground beef (or ground bison)
- 1 cup diced white onion
- 2 tbsp minced garlic
- 5 cups diced sweet potatoes
- 2 stalks chopped celery
- 1 can green beans, drained
- 1 (6 oz.) can tomato paste
- 1 (4 oz.) can diced green chiles
- 1 can diced tomatoes, with liquid
- 2 cups beef broth
- 2 cups water
- 2 tbsp chili powder
- 2 tsp cumin
- 2 tsp smoked paprika
- 1 tsp chipotle chili powder (optional)
- 1 tsp salt (or more to taste)
- 1/2 tsp pepper
Instructions
- Add the ground beef and minced garlic into a large skillet over medium-high heat. Break apart beef and brown. Once browned, drain the grease and add to a slow cooker
- Add all of the vegetables, canned items, spices, and liquid to the slow cooker
- Stir everything to combine and incorporate the spices
- Cover the slow cooker and cook on low for 7-8 hours, or on high for 4 hours, or until the sweet potatoes are cooked through
Notes
- Chicken broth can be substituted for beef broth
- Beef broth is naturally saltier than chicken broth. Wait until the end of cooking to add any additional salt
