Ingredients
- 1.5–2 pounds of chicken drumsticks
- 2 cups potatoes, thickly diced
- 1 and 1/2 cup of onion, chopped
- 3 long carrots, sliced
- 3 stalks celery, chopped
- 1 cup chicken broth
- 2 tablespoons coconut aminos
- 2 tablespoons honey (no additives) – exclude if doing Whole30
- 2 tablespoons olive oil
For the Seasoning:
- 1 tablespoon dried onion
- 1/2 teaspoon garlic powder
- 2 teaspoons dried thyme
- 1 teaspoon pepper
- 1 teaspoon salt
- 1 teaspoon allspice
- 1 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon nutmeg
Instructions
- Add honey, oil, coconut aminos and spices for the seasoning into a large bowl
- Stir until combined
- Place chicken in the bowl and stir to coat chicken
- Cover and refrigerate 1 hour-24 hours
- Once chicken has marinated, remove from fridge
- Preheat oven to 400 degrees F.
- Chop veggies and place in the bottom of a large rimmed baking dish
- Pour chicken broth into dish
- Place marinaded chicken on top of the veggies
- Put dish into oven for 40 minutes, turning chicken halfway through
- Every oven differs slightly, so check chicken before taking it out and give it a few more minutes if it needs more time!
