You will need a half of a diced red pepper, a half of a diced green pepper, and half a chopped onion. I used white but a yellow or red will work depending on your preference or what you have on hand. Lastly you will need a teaspoon of garlic, 2 teaspoons of chopped parsley, salt and pepper, and a quarter cup of milk.
How to Make the Recipe
Start the recipe by preheating the oven to 375 degrees F. If you haven’t already done so, gather up the veggies and ham. Chop your onion and bell peppers into half inch pieces. Dice or chop the ham into roughly one inch pieces.
In a large casserole dish, layer in the hash browns at the bottom after giving it a light spray or coating with cooking oil. Use a spoon or spatula to ensure the hash browns are in a mostly even layer.
Next, in a large mixing bowl, crack the eggs and add the milk. Mix it together with a spoon or rubber scraper until well combined. Add the rest of the ingredients to the bowl and continue mixing until incorporated. Gently pour the mixture over the layer of hash browns in the casserole dish and with the spoon or rubber scraper, pat the egg bake so it is level.
Place the casserole dish in the oven and bake at 375 degrees F for 50 minutes. If you added shredded cheese to your ingredients list, pull the egg bake out after 30 minutes and sprinkle the cheese on top and finish cooking.
