This immune boosting juice recipe is a delicious, fast way to get fruits and vegetables into your day. This juice recipe is so refreshing, delicious, and nutrient dense. Juicing beets, carrots, celery, lemon, apple and cucumber together is my favorite combination for a tasty drink that boosts immunity and helps the digestive system.
Ingredients
To make this juice you need 1 large beet or 3 smaller beets. You will also need 3 stalks of celery, 3 carrots, and 1 cucumber. Lastly you’ll need 1 large lemon and 1 green apple.
You will also need a juicer. The one I’ve been using is the Breville 800JEXL Juice Fountain Elite. I’ve had it for awhile and it works great and cleans up easily.
Making Immune Boosting Juice
Start the immune boosting juice by prepping the ingredients. First make sure everything is cleaned for food safety. Next, peel the beet (or beets) and cut the cucumber in half or into thirds depending on the size. Cut the apple into quarters and halve the lemon and you’re all set to juice!
Once you have peeled and prepped the beets, carrots, cucumber, apple, and lemon, get out the juicer and set it up. Gather all the ingredients together and start the juicer.
Start juicing the ingredients. Begin with a softer ingredient such as a beet and alternate to a harder one like a carrot. Keep alternating that way to get as much out of each ingredient as you can. End with one of the harder ingredients to push through any of the remaining of the softer ingredients that may be in the juicer still.
Shut down the juicer and gather your glasses. Add ice to them and fill the glasses with your fresh, tasty, juice!
Serving and Storing Instructions
Serve this immune boosting juice over ice with your breakfast or with an afternoon snack. I like to just make it as its own “snack” quite a bit as well. Try blending it with the ice and making a smoothie on a hot day!
If you choose to store this juice, pour it into a bottle or jar with a well sealing lid and refrigerate it. It will keep well for about 4 days but you’ll finish it before them because its delicious!
Storing Jar Recommendations:
Storing your juice properly after juicing (if you’re not drinking it right away, that is) is essential to keeping the flavor and nutritional value of your juice at its peak. Making sure your storage container seals well is very important.
These options are some of my favorite ways to store juice. The Weck jars are probably my favorite as they double as a glass and are extremely easy to maintain.
Juicing Tips:
When you properly make juice there are added benefits so the juicing and also makes the process much smoother. It also helps keep the cleanup to a minimum which saves you both time and effort!
- If you wash and prep all of your fruits and veggies ahead of time it take the juicing time down to next to nothing.
- Your juicer will have a pulp catcher for the non-juice parts of your fruits and veggies. Line it with a plastic bag ahead of time and reduce your cleanup.
- Wear an apron or older clothes when juicing. Some of the ingredients (beets especially) will stain clothes. Wear gloves as well to further reduce mess if you prefer.
- Thoroughly clean your juicer ahead of time and let it completely dry before juicing. I try to clean mine ASAP after juicing (or have my husband do it) so its ready to go for next time. It’s easier to keep clean and it keeps it in good condition.
- You get the most out of your juice when enjoying it within 48 hours of juicing. It’s better tasting AND has better nutritional value even though it will keep for about 5 days when properly stored (see trotting recommendations).
- Experiment with different flavors! Use in season produce to try new flavors and add in your current favorites to make something delicious.

I made this in the vitamix, then strained the pulp out through a nut bag. I added a piece of ginger because I love beet + ginger together.
