I love Pico de Gallo. I mean.. LOVE. It’s used in a huge handful of recipes on the blog here, so it’s high time I add an actual recipe! Pico is such a simple thing to make. While I won’t lie and say I never buy it prepared already at the store, I make homemade easy pico de gallo all the time. Especially when doing a Whole30, it can be a lot more cost efficient to make it yourself.
That, and it really does take all of 10 minutes! I prefer to chop it by hand to control the dice a bit more. However you can make it even easier by tossing the pico ingredients into a food processor. Don’t over do it though! The traditional Pico de Gallo is supposed to be chopped and chunky!
This easy Pico de Gallo won’t vary much from other traditional pico recipes. They all have pretty standard ingredients that make up the recipe. That’s part of what makes this Whole30 pico recipe so great though. It’s also Paleo, gluten free, yada yada, all on it’s own because it’s just naturally healthy! It makes a great addition to so many different meals. If you’re making this ahead of time instead of serving it right away, I’d make sure you seed the tomatoes well so the salsa doesn’t get too watery in the fridge.

Ingredients
- 5 plum tomatoes, deseeded and diced (about 2 and 1/2 cups)
- 1/2 red onion, diced
- 2 small jalapeno peppers, deseeded and diced
- 1/2 cup cilantro, chopped
- 1 clove garlic, minced
- 1/4 teaspoon salt, or to taste
- Juice of 1 lime
Instructions
- Chop all ingredients and combine together in a medium sized bowl
- Add more salt or garlic per taste
- Serve immediately, or cover and refrigerate up to 5 days
