My husband will eat any and all things buffalo, and it’s made me into quite the lover of the stuff, too. We love making a big batch of healthy chicken salads at the start of the week to have easy, go-to things to grab for quick lunches. This one is light, full of veggies which stay crunchy, and has an amazing creamy buffalo zing!
Buffalo Chicken Salad Ingredients
This buffalo chicken salad has minimal ingredients, which allows them all the chance to shine in every bite. You’ll only need diced chicken (shredded would work, too, if you prefer), carrots, celery and red onion. For the sauce, the perfect combination is just a bit of mayo and creamy buffalo sauce. For both the mayo and buffalo, I always opt for Primal Kitchen’s products.

How to Make This Whole30 Chicken Salad
If you already have leftover chicken breasts or rotisserie chicken, this is the perfect recipe to use your leftovers in! If you don’t, simply bake or poach the chicken to fully cook it first. After that, the buffalo chicken salad comes together in no time. You’ll need to dice up the carrots into fine pieces, and then the celery and red onion.
After that, dice or shred your chicken, add in your Primal Kitchen Buffalo Sauce, and mayo and add everything to a large bowl to combine. Primal Kitchen’s Buffalo Sauce has great flavor to it all on it’s own, but you can spice things up by adding more garlic powder or cayenne if you’d like. You can also add in even more veggies if you wanted to, such as green onion, broccoli or cauliflower.
Storing Your Buffalo Chicken Salad
This easy Whole30 chicken recipe stores really well in the refrigerator for up to 5 days. Make sure to store in a sealed or covered container. The vegetables stay nice and crunchy, and the buffalo sauce marinates the chicken a bit! I enjoy eating this buffalo chicken salad over a big bed of greens, or in romaine or butterhead lettuce wraps.

Ingredients
- 1 lb. chicken breast, seasoned with salt and pepper, cooked and chopped
- 3/4 cup diced celery
- 3/4 cup peeled and finely diced carrots
- 1/2 cup finely diced red onion
- 1/3 cup Primal Kitchen Buffalo Sauce
- 2 tablespoons mayo
Instructions
- If not using precooked chicken, cook your chicken breast first by placing on a sheet pan and baking for 40 minutes on 350 degrees F. Then let cool and dice.
- Combine your chicken, celery, carrot, onion, mayo and buffalo sauce into a large bowl. Stir to fully incorporate.
- Enjoy over a big bed of greens, in romaine or butterhead lettuce wraps, or on it’s own!
