Ingredients
- 1-pound cod fillets (4 fillets)
- 4 tablespoons butter (or ghee/vegan butter/olive oil)
- 1 tablespoon minced garlic
- 1.5 tablespoon lemon juice
- ½ teaspoon onion powder
- 2–3 tablespoons chopped parsley
- Salt and pepper, to taste
- Lemon slices, optional for serving
Instructions
- Adjust your oven racks so the rack closest to the broiler is about 6 inches from the broiler. Preheat the broiler on the oven
- Dry both sides of the cod fillets with a paper towel, and season well with salt and pepper on both sides
- Add the butter to a large cast iron skillet over medium-high heat. Once the butter is melted, add in the garlic and stir with the butter until fragrant. Then stir in the lemon juice and onion powder
- Add the cod fillets into the skillet and sear for about 1 minute, and then flip them carefully. Place the skillet into the oven and broil for 7 to 10 minutes, until the internal temperature is 130-140 degrees F. The time needed will depend on the thickness of your fillets. For thinner fillets, check them closer to 7 minutes, and thicker ones check closer to 10 minutes
- Remove the skillet from the oven, garnish with parsley, lemon slices and additional salt and pepper, if desired
Notes
Dairy Free Broiled Cod: If you want to make this recipe dairy free, just swap out the butter for ghee, olive oil, or vegan butter and make the recipe as normal.
