Ingredients in Whole30 Air Fryer Shrimp Fajitas
The ingredients for these air fryer shrimp fajitas are incredibly simple, and prepping them is very quick. You’ll first need fajita seasoning, which you can make yourself using this recipe. We keep it on hand in a small jar for easy weeknight meals like this one! You could also use a store bought fajita seasoning if you have a sugar-free one you prefer.
You’ll then just need one pound of shrimp, and you can leave the tails on or remove them, depending on your preference. Along with the shrimp, you’ll need one red bell pepper and one green bell pepper, and half of a red onion, all thinly sliced. Half of a lime and a bit of olive or avocado is needed to coat the shrimp prior to cooking, too.

How to Cook
Start by adding all of the fresh ingredients into a large mixing bowl and then adding the fajita seasoning, lime juice and oil. Use a pair of tongs or two forks to toss everything together so that the vegetables and shrimp are coated with the fajita seasoning. Then simply add it all to your air fryer basket and cook on 350 degrees for 6-8 minutes, toss, and cook for another 6-8 minutes, depending on how crisp you want your vegetables.
How to Serve Air Fryer Shrimp Fajitas
Nothing is wrong with eating these paleo shrimp fajitas by themselves but in our house we mix it up by adding it on top of greens with some salsa and guacamole on top to make a shrimp fajita salad. Pairing it with thinly sliced jicama to make “tacos” or riced cauliflower is also another yummy Whole30 approved option. You can also add it to wraps, or over regular rice if not keeping it Whole30/low carb!
