Air Fryer Butternut Squash

Butternut squash is a simple side that can go with almost anything. This air fryer recipe is paleo, Whole30, and gluten free. Ingredients

  • 1 large butternut squash, peeled, seeds removed and cubed (diced in a small dice)
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste
  • Optional: chopped parsley to garnish

Instructions

  1. Add the cubed butternut squash to a mixing bowl with the oil and spices. Toss the squash to coat evenly with the seasonings and oil
  2. Place the squash into the air fryer basket or rack in an even layer and cook on 400 degrees F. for 16 minutes, until the squash is tender to your liking. For crispier squash, add 2 minutes cooking time. Shake or flip the squash halfway through cooking
  3. Remove from the air fryer and garnish with parsley if using

Notes: Cook time may vary based on how small or large you cubed the squash

If using a very large squash, and depending on the size of your air fryer, you may need to cook them in two batches
